



I never liked Chinese Chives before i got married. Chinese Chives is something rarely found in my mum's cooking. I guess, it's not one of the Hakka traditional ingredients. Chinese Chives Kuih / pancake (Teow Chew Style) is a common snack in my Mother In law's home. Even these Kuih are made for prayers. I have tried but just too hard.
Anyway, when comes to dumpling. I love Chinese Chives with Pork. I think its really a hassle to make the dumpling skin for a rookie like me. Even wrapping each dumplings really took me alot of time and effort. Should snap the first few dumplings that i wrapped. Really looks ugly although these ones are not so good etiher!! haha but too late, already inside my stomach.
Ingredients
A
150g Chinese chives
6 Chinese Mushrooms
1 tbsp Dried Shrimp
1 tbsp Minced Ginger
B
400g Minced Chicken
50g Minced Beef
1/2 to 3/4 tsp Salt
1/4 tsp Pepper
1/2 tsp Sugar
1 1/2 tsp Soya Sauce
1 tsp Shao Xing Wine
1 1/2 tsp Oyster sauce
4 tbsp Water
1/2 Sesame Oil
Total made: about 20 dumplings
Method
1. Mix ingredient A and keep stirring with spoon in one direction till the texture is sticky.
2. Mix with Ingredient B
3. Ready to wrap
4. Put the dumplings in boiling water and cook for about 2 to 3 mins Or til the dumpling floats
5. Then, grill the cooked dumpling on each side til brown
