
Ingredients A
500g Fish Head or Fish fillets
2 ginger slices
2 tbsp Shaoxing wine
1 tbsp fried shallot oil
Ingredients B
25g bird's eye chillies
30g ginger
30g garlic cloves
Sauce (mix well)
2 tbsp lime juice
1 tbsp sugar
1/2 tsp Monosodium glutamate (optional)
3 tbsp Thai Chilli sauce
4 tbsp fish sauce
1 tbsp rice vinegar
6 tbsp water
Method
- Cook some water in a wok, once boiled, add in Shaoxing wine, ginger slices and Fish head/fillet, cook at low heat until cooked. Dish up, spoon in fried shallot oil
- Finely chop the bird's eye chillies, ginger and garlic clove, mix it with sauce mixture, then pour over the cooked fish fillet. Serve at once
For the second part, i prefer to saute and lighlty brown the ginger and garlic clove til fragrant before i mix with the sauce.
